Plum Cinnamon Crumble Cake

Juicy, fruity, warmly spiced with cinnamon & perfectly crispy – the ultimate vegan cake classic.

Preparation

1. Preheat the oven:
Preheat oven to 180 °C / 350 °F (top & bottom heat). Grease a springform pan (approx. 24 cm / 9.5 inch).

2. Prepare the base:
Add flour, vegan margarine, sugar, vanilla sugar and baking powder to a bowl. Pour in water and knead into a smooth dough.

3. Shape the base:
Press the dough evenly into the pan and slightly up the sides.

4. Prepare the plums:
Wash, pit and quarter the plums. Spread evenly over the base.

5. Make the crumble:
Combine flour, vegan margarine, sugar, vanilla sugar and cinnamon. Rub with fingers until crumbly.

6. Assemble:
Sprinkle the crumble generously over the plums.

7. Bake:
Bake for 60 minutes until golden. Let cool completely before slicing.

  • 1 packet vanilla sugar
  • 1 packet baking powder
  • 50 ml water

Topping:

  • 700 g plums

Crumble:

  • 150 g flour
  • 100 g vegan margarine
  • 100 g sugar
  • 1 packet vanilla sugar
  • 2 tsp cinnamon
